Are these the little sweet peppers? I don't eat the hot ones, but the little mild ones are wonderful roasted. I put them in a baking dish, coat with olive oil, a little salt, and bake at 350 for about 1/2 hour. They are great as a side dish with almost everything. I love them with lentils.
